I Accidentally Made a Healthy Snickers (and It’s Messy AF!)
You ever stare at something in your pantry, knowing it needs to be used before it turns into an unintentional science experiment? That was me with a bag of organic pitted dates.
Usually, I eat them plain, or if I’m feeling fancy, I’ll stuff them with peanut butter or almond butter. But this time, my sweet tooth demanded more. So, I took it a step further… stuffed them, dunked them in dark chocolate, and sprinkled them with chopped peanuts.
And just like that, I accidentally made a healthy version of a Snickers. You’re welcome.
Let’s Be Honest… This Gets Messy
I won’t sugarcoat it (literally). This process is a hot mess. There’s melted chocolate everywhere, peanut butter in places it shouldn’t be, and a 99% chance your kitchen looks like a crime scene by the end. But it’s worth it.
Because these little chocolate-covered, peanut-butter-stuffed dates? Absolute chef’s kiss perfection.
And the best part? You can pretend they’re a health food (which, technically, they kind of are).
Chocolate-Covered Peanut Butter Dates Recipe
📌 You’ll Need:
10-12 organic pitted dates
Peanut butter, almond butter, or any nut/seed butter preferred (for stuffing)
½ cup Enjoy Life Dark Chocolate Chips
Chopped peanuts (for topping)
📌 How to Make:
1️⃣ Line a sheet pan with parchment paper (trust me, you don’t want to skip this step).
2️⃣ Slice open each date, but don’t cut all the way through.
3️⃣ Stuff with your favorite nut butter. Be generous—this isn’t the time for self-control.
4️⃣ Melt ½ cup of chocolate chips in a glass bowl, microwaving in 30-second intervals, stirring in between, until smooth.
5️⃣ Dip each stuffed date into the chocolate and coat it fully (or, if you’re feeling lazy, just drizzle the chocolate over them).
6️⃣ Sprinkle with chopped peanuts for that Snickers-y vibe.
7️⃣ Pop them in the fridge for at least 30 minutes to set. I left mine for an hour because patience is a virtue (or whatever).
8️⃣ Store in an airtight container in the fridge and snack on them all week long. Or for two days. Let’s be real, they probably won’t last that long.
Final Thoughts: Is This Better Than a Snickers?
I’ll let you be the judge. These little guys hit the spot when you need something sweet but don’t want to nosedive into a sugar crash. Plus, they’re packed with fiber, healthy fats, and antioxidants… so technically this counts as self-care, right?
PS: If you want an actual Snickers, go ahead and have one. That’s okay too. Balance, my friends. Once in a while is A-okay!
